Appetizers
Mullet with grilled oranges and saffron
Tuna carpaccio with chilli sorbet and lavender
Marinated duck slices in ginger
Beef tenderloin steak tartare with lovage and olives 
Baby squid with vinaigrette sauce and basil

Soups
Cream of fennel with smoked eel
Chicken soup with lamb ravioli

Main courses
Lobster with ghee butter and herbs
Grilled gilthead with pineapple mousse, jalapeño and coriander
Baltic salmon with warm avocado and potato salad
Lamb served with goat cheese, pear and mint emulsion 
Rosse veal with topinambour and mushrooms in Cabernet Sauvignon sauce 
Home-made tagliolini in lemon grass and cider volute sauce
